This may sound a bit odd to you but believe me when I tell you it is delicious! With summer in full swing my garden and farmers markets are starting to become plentiful with fruits and veggies and I am taking advantage of them! I made this recipe (I cut in half and used as a side dish in case my family didnt like it) and my husband and daughter ATE it all up! I was so happy!!
FOR FULL RECIPE
1-2 cloves garlic
6-7 basil leaves
-Use your vegetable peeler and peel your zucchini by holding the stem part and peeling into ribbon sized strips. Make sure you wash your zucchini very well. Peel both zucchinis
-Wash your tomatoes and cut them into chunks (bite sized pieces)
-Crush your garlic (if making a side and only using one zucchini and one tomato use one clove of garlic-if doing the full batch I use two cloves)
-Roll your basil and chop into small pieces and then add with garlic and chop for another few seconds to blend together in a sense
-Put your zucchini, tomatoes, garlic,basil in a bowl-season with salt and pepper (and red pepper flakes if u like a kick)
and then drizzle olive oil on it-just enough to coat it and then mix together. I use my hands but 2 forks will work.
-Cover with plastic wrap and leave chill in fridge for at least and hour or I left mine for 4 hours.
-SQUEEZE SOME LEMON JUICE RIGHT AT END BEFORE U PUT IN FRIDGE TO ADD A BIT OF FRESHNESS AND ACID IF YOU LIKE!
-USE AS LITTLE OR AS MUCH GARLIC AS YOU LIKE. IF FRESH GARLIC IS TOO STRONG YOU CAN ROAST SOME AND MIX THAT WITH THE OLIVE OIL OR PUT IN MICROWAVE A FEW MINUTES TO SOFTEN UP.
-ADD STRIPS OF CARROTS OR WHATEVER KIND OF VEGGIES YOU LIKE!
