I have problems with milk products and sugar. Having diabetes and lactose issues makes eating one of my favorite things impossible! And even if I stray and eat it….I suffer! I found this great recipe that is FULL of protein—VERY healthy for you and can even be used as a mid day smoothie if you add a bit more Almond milk and Ice. I will add that to the Tip section! My whole family loves this and on these hot and humid days it is nice to sit down at night and have a bowl of this and cool off!
WHAT YOU NEED
3 Sugar Free-Fat Free Vanilla Puddings ( the ones that come in snack pack)
1 ..7-8 OZ Greek Yogurt (regular flavor)
5-6 pks of splenda or whatever sweetener u like
Almond Milk about a 3/4 cup
Vanilla bean and Vanilla extract ( I only used extract as i had no beans here) (but if you use both just scrape one bean in the blender)
I ADDED BANANA
FREEZE THE PUDDINGS AND YOGURT UNTIL FROZEN SOLID- (IF YOU USE BANANA TAKE OUT OF SKIN CUT IT UP AND FREEZE)
WHEN ready put it all in a blender and BLEND! It takes a few minutes but you can add more almond milk if you need it to get it going. I add yogurt first then the puddings and then banana so not to overload, then add your vanilla extract once smooth.
-You can use chocolate pudding and all the same ingredients if you want
-You can add some ice once it is blended to make it more of a milk shake consistency than the soft serve
-You can also freeze blueberries-strawberries-peaches whatever u want to add to it. (YES EVEN USE FROZEN FRUIT FROM STORE)
