I was watching TV the other day and saw a great recipe on the Food Network and I KNEW I HAD to make it. It would be something Dave and Emily would eat and so I went for it. AND it only takes as long as the pasta takes to boil to make the sauce!
Boil 1 pound of Ziti pasta (make sure when water comes to boil-add salt to water and stir pasta often so it doesnt stick)
FOR THE SAUCE
3/4 of a bag of baby spinach
1/4 cup goat cheese
1/4 cup cream cheese (you can use fat free or low fat if you choose)
2 or 3 cloves of garlic- I used 3
salt and pepper
In a blender- food processor-or immersion blender Blend all of the above ingredients. I used my Vitamix and it got very smooth, which I loved, however you dont have to have it all the way smooth.
Take the rest of the baby spinach and put it in the bottom of the bowl you will be putting pasta in once done.
When pasta is done – reserve 1/4 cup of the pasta water- and put the drained pasta over the fresh spinach in your serving bowl. Toss and let the heat from the pasta wilt the spinach.
Take your RAW sauce that you made and dump over your pasta in the bowl and toss to coat. you will not have “leftover” sauce like you would with red sauce- you just want all the noodles covered. If you notice that the pasta sauce you added is a bit dry add some of your reserved water and then mix again. It will loosen the sauce a bit and help it spread easier.
Then just grate a bit of Parmesan cheese on top and serve!
YOU CAN ALSO ADD – tomatoes or whatever other kind of veg you like to the pasta once in bowl and then coat it with the sauce. But this recipe took 10 minutes to fully make and was delicious- healthy and filling. You can also use wheat pasta if you want to make it a tad more healthy. This with a side salad is AWESOME!!!!!!!!
